Here we have a sparkling fermented drink made from the marc of the Romarand and Doudins plots.

It is a reinterpretation of the frênette: a decoction of ash leaves with which the pressed grape marc is re-humidified.

The result is a nice sparkling drink with a joyful color, with bitters, fruit and a hint of acidity. A great discovery to make!
