This cuvée from the 2016 harvest was aged for 2 to 3 years in barrels. This sweet cider is a blend of 4-5 tart (sebin) varieties, bittersweet apples and a large amount of honey.
For the first step (cider making), the indigenous yeasts do their work in a thermo-regulated stainless steel vat, then selected yeasts are used to start the fermentation of the cider and honey blend.
The mouth is long and complex, breaking down into several stages, alternately showing the power of apple and candied notes, waxy and honeyed, but also more tertiary notes of prune and fresh clove. The sugars are well stretched by the natural acidity of the apples.
This sweet cider (120g residual) will be a perfect match for foie gras, scallops, Roquefort cheese and caramelized fruit desserts. Once opened, this bottle can be kept for several months in the refrigerator.
