Small technical point. The pigeage is an ancestral gesture! It consists in pushing the cap, i.e. the solid matter floating at the top of the tank, into the liquid must. Its effect is to facilitate maceration by optimizing the gentle extraction of the grape constituents that diffuse into the must.
