Resulting from a new range of experiments, this cider was raised in barrels heated with apple juice to "caramelize" the wood! (Technique invented by the Normandy cooperage Desfrieches). The result is magnificent and very complex, with notes of ripe fruit and a salty orange wine profile with powerful bitters. A gastronomic cider for sure!
