Only the first press was used, without decantation. After 3 months of aging on lees, the wine was then disgorged by hand.

The nose is exhilarating, on pear, anise, green apple and peach. In the mouth, the bubble is fine, the aroma is also on peach and also elderflower. Everything is coated in a framework full of minerality, thanks to the soil from which the grapes come.
