2021, a complicated vintage for Simon Rouillard. He gathered the survivor grapes of his field in this cuvée: 70% of Gamay, 20% of Chenin and 10% of Grolleau.

All these little people have co-fermented together in whole bunches for 8 days, then was raised in tank.

A beautiful texture, depth, complexity. The icing comes out and on the final, a hint of spices.

Big length! It is a very beautiful wine that is not going to improve over time.
