A very southern wine, with aubun, carignan and aramon from the area around Carcassonne.

A meticulous work for this cuvée: the bunches are sorted one by one. The less ripe grapes are pressed directly, and the rest is macerated for 25 days. Then a long ageing of 24 months on slats...

A surprisingly very very fresh juice! On red fruits, vegetal, it is lively, expressive and very slightly tannic.
