A cuvée that can be called natural fruit sparkling since it is made up of 90% apples (bittersweet and tart varieties) and 10% quince.

The fruits come from east and south-east facing hillsides on clay-limestone soils.

When tasting, a side of quince paste is really felt and the whole is at the same time floral, fresh and very airy.
