The cellars of the abbey of Saint-Maur, in the commune of Thoureil, it is in this cellar in this atypical semi-troglodyte cellar that Sylvain Martinez is installed since 2016.
But it is since 2006 that he started his activity with a first hectare of vines after having worked with Olivier Cousin, where he made his apprenticeship on the work of the grounds and the conduct of the vine.
Today, it is about 3 hectares of land gathering chenin, grolleau, gamay and pineau d'aunis that he vinifies.
Sylvain experiments with macerations and offers a varied range of cuvées that we all love: precision, minerality and tension. Great sapidity!
