It was in 2014 that Yves Roy, from Jura, created Novice, located in Poligny.

In 2014, he chose a professional retraining, bought 5 hectares of vines and formed at Valentin Morel. Beautiful challenge!

They ensure that each plot has its identity and highlights its terroir. A meticulous and observation work that continues at the cellar where it lets spontaneous fermentations are done at their rhythms, with the least possible intervention.
