Nicolas Carmarans first got his foot in the door of natural wine with his very cute Café de la Nouvelle Mairie, located in the 5th arrondissement of the capital, an address that is still a must-see today.
But the call of the vine was too strong, and in 2003, he returned to his native Aveyron, a few kilometres from Laguiole.
Located in the heart of the Haut-Rouergue on the foothills of the Aubrac, its 4-hectare vineyard is located on the slopes of the Truyère and its tributary the Selves. In particular, you can find the very local fer servadou, but also chenin.
Rare, sparkling vintages, and made by the hands of a guy with whom you would become a good friend.
