At the helm of Chemin des Sept, a cidery based in Quebec, are Étienne Tremblay from the Dieu du Ciel! brewery and Frédéric Le Gall from Trou du Diable.
From the very beginning, it was a small family orchard that they gradually developed, with different varieties of apples for eating and cider-making. Today, pears, plums, and sour cherries have also been added.
With just a few barrels, the duo offers dry, spontaneously fermented ciders that have aged in barrels previously used for beer.
