Bouquier

The Bouquier brewery is Guilhem's great little project. Passionate about craft beers, he lives in Japan, a country that inspires him by the importance it places on fermenting food and drink.

He returns to France a few times a year, and it's in a small cellar on his family's property in the Cantal region of France that he brews and ages his wild beers in barrels. He uses old varieties of cereals grown close to the brewery.
