Æblefald
Æblefald is a Danish project led by Mikkel and Sebastian. They made their first vintage in 2021 and their production is still fairly confidential.
Their approach is to obtain wild fruit from private individuals, in neighbouring orchards, in order to harvest apples that would otherwise have been left to rot. The fruit is pressed directly, with a slight maceration for a few days, and the juice is then fermented in vats or barrels, without any other additions.
Mikkel and Sebastian's aim is to produce tangy ciders that reflect their terroir, in the same way as they like natural wine.
